Fun Fact
While animals store glucose as glycogen, many plants store their energy in the form of inulin – a complex fructan. The roots of chicory, Jerusalem artichoke, and agave are particularly natural storage sites.
This means that inulin is essentially "plant glycogen" – only without the calorie boost. For us, it doesn't act as an energy source, but rather as food for the good intestinal bacteria.
