The button mushroom (Agaricus bisporus) is the most consumed edible mushroom in the world and an indispensable part of modern cuisine. Originally from Europe, it is now cultivated worldwide. Its popularity stems not only from its mild flavor and culinary versatility, but also from its interesting nutritional profile and potential health benefits.


General Information

The button mushroom belongs to the Agaricaceae family. Three varieties are most commonly available:


  • White button mushroom – mild in flavor, the most frequently sold
  • Brown button mushroom (Cremini) – stronger aroma
  • Portobello – mature brown button mushroom with a large cap and intense flavor


All three varieties belong to the same species (Agaricus bisporus) – the only difference lies in their stage of maturity.


Button mushrooms are cultivated in controlled environments on special substrates (usually compost based on straw and manure) and are therefore available year-round.


Mushrooms contain many nutrients that can offer health benefits: beta-glucans, ergothioneine, polyphenols, lectins, fiber, B vitamins, vitamin D (in UV-treated mushrooms), and minerals (selenium, copper, potassium).


This is just one of the reasons why mushrooms are widely used in food, supplements, enzyme production, fermentation, and even the cosmetics industry.

Beta-glucans from mushrooms can modulate the immune system and are being investigated in the areas of immune function and inflammation regulation.

Vitamin D – UV-treated mushrooms

Mushrooms can produce vitamin D2 through UV light and are therefore one of the few plant-based sources of vitamin D.
