Broccoli ("Brassica oleracea var. italica") belongs to the cruciferous family (Brassicaceae). Originally from the Mediterranean region, it is now widespread throughout the world. Its green florets, thick stems, and numerous small buds are characteristic. The florets and parts of the stalk are typically eaten; leaves and shoots are also used.
Health Benefits
Broccoli is rich in vitamins C, K, folic acid, potassium, iron, and fiber. Particularly exciting, however, are its secondary plant substances – especially glucoraphanin, which is converted into sulforaphane by the enzyme myrosinase.
Studies show that sulforaphane has anti-inflammatory and antioxidant effects and activates the body's own detoxification mechanisms. Epidemiological data also suggest a lower risk of certain types of cancer with regular consumption of cruciferous vegetables. There is also evidence for metabolic health: In a study with prediabetes patients, a broccoli sprout extract lowered blood sugar levels.
Furthermore, a glucoraphanin supplement was able to improve elevated liver enzymes in a clinical trial.
Just one or two servings of broccoli per week appear to have a positive effect on general health.
Broccoli in Supplements
Because sulforaphane is relatively unstable, standardized extracts from broccoli seeds or sprouts are usually used in dietary supplements. The quality and content of glucoraphanin or sulforaphane are crucial. Bioavailability also plays a role – the enzyme myrosinase, for example, is heat-sensitive, which is why broccoli should be processed carefully.
However, we emphasize that experience has shown that suforaphane is not stable even in standardized extracts.
Did you know?
- Broccoli sprouts contain significantly more sulforaphane precursors than fully grown broccoli.
- Gentle steaming preserves the valuable enzymes, while prolonged cooking significantly reduces their levels.
- The name "broccoli" is derived from the Italian brocco, meaning "sprout."
